Hospitality

Skewers

A small fast-food room in Kupondole, planned around the queue rather than the seating.

Fast food is circulation. If the queue crosses the tables, the room fails at the exact moment it is busiest.

The counter and menu board are set immediately inside the door with the waiting line held along the glazed street wall, and the seating starts only beyond it. Tables are hard-wearing timber on steel with fixed banquettes, so nothing has to be reset between sittings. A single wall is given over to a drawn Kathmandu street scene, which does the work that would otherwise fall to more finishes.
